I drink espresso every day. But I never thought much about the machine behind it—until I spoke with a coffee roaster who sources equipment from China. He told me something that stuck. “The machine doesn’t make the coffee. The roaster makes the coffee. The machine just has to stay out of the way.” That means consistent pressure. Stable temperature. Repeatable extraction. If the machine drifts, the coffee changes — and not in a good way. The monthly capacity is around 50,000 units. What he cares about is not the production number. It’s whether every machine in a batch performs the same way.
